Cheesy Mac

I found this recipe at our grocery store, Publix. They have recipes and cookbooks out. They're called Publix Apron's Simple Meals. They have a lot of yummy looking recipes. I've only tried a few but they have all been good.

It's Friday night and my boyfriend is at home since he has to work early in the morning and my son is at the movies with friends. It's pouring rain outside so I decided to make myself some dinner. I've been wanting to make this Cheesy Mac for a while now, so that's what I made! I ate it while watching "True Blood" on HBO on Demand! Anyone know when the new season starts?

The recipe was easy to follow and good. My son gobbled a plateful when he came home from the movies.

Ingredients:

1 1b. ground beef chuck
1 (14.5 oz) can beef broth
1 cup water
8 oz elbow macaroni (2 cups)
1 (12 oz) can evaporated milk
1/4 cup processed cheese sauce
8 oz shredded sharp cheddar cheese

Directions:

Preheat large pan or electric skillet on medium high 2-3 minutes. Place ground beef in pan; cook, stirring to crumble meat, until beef is brown and no pink remains.

Stir in broth, water and macaroni; bring to boil. Cook 10-12 minutes, stirring occasionally, or until liquid is mostly absorbed and macaroni is soft and tender.

Stir evaporated milk into pasta; removed from heat (or turn heat). Stir in both cheeses until smooth and melted. Serve.

Yield: 6 servings

This one lookd yummy and is very economical... one you could stretch easy too! I think this would be a winner in my family.

Oh, what a great recipe! And it's "kid friendly"!! So many times when I read food blogs the food looks great, and I want to eat it, but I have to remember I've got three kids to feed too! BTW, I LOVE Publex - whenever we vacation in Florida I always want to go there!! I'm a foodie!! :)
