Enchiladas



I was going to make steak for dinner, but my son begged me for enchiladas. So....steak tomorrow! Jimmy ended up making most of the enchiladas.

My daughter makes a wonderful enchilada dish. She makes it like enchilada lasagna. We kind of winged the recipe. Here's our version tonight:

1. Browned 1 lb ground beef; drain. Add 1/2 can refried beans, 1/3 can of enchilada sauce, picante sauce, queso dip from jar. Heat through.

2. Mix remainder enchilada sauce with some picante sauce. Layer 2 flour tortillas on bottom of baking dish (the size down from 13 x 9). Layer half of the ground beef mixture. Add some enchilda/picante sauce, cheddar cheese and black olives. Repeat.

3. Bake at 350 degrees until heated through.
