Copy Cat Chik-Fil-A Chicken Nuggets


I found this recipe on one of my favorite sites - Better Than Burgers.  I love the recipes found there!  I saw this recipe and decided to try it.  I love copy cat recipes.

My friend Cheryl came over with her baby tonight for dinner. My daughter and her family were here too.  Everyone chipped in.  We had these nuggets and macaroni and cheese made by me; my daughter brought dessert and Cheryl made a salad and baked beans.  Also eating with us was my son and two of his teenage friends.  Jimmy's friend Antonio did most of the frying.

The 8 pieces of chicken seemed like too much and I had to make 2 more batches of the flour mixture.  Besides that, it was delicious!  I would cut the chicken amount down next time.  It was definitely a keeper.  Everyone had 2 or more helpings.

Pioneer Woman Comfort Meatballs




I that these meatballs looked really good and they were! The sauce was so good on the meatballs.  I think it would taste awesome on a meatloaf!  This would also make a great appetizer. I served ours with mashed potatoes.  Yummy!

Gooseberry Patch Cheddar Chicken Spaghetti

Last night for dinner I made Cheddar Chicken Spaghetti.  I had received this as a free recipe from Gooseberry Patch.  It is from their Sunday Dinner at Grandma's book.  It was a great recipe to make after work.  Not time consuming at all and very easy.  We all liked it very much. I did add a little extra cheddar cheese.  It makes a 13 x 9 pan; my son, his friend, and I ate a good chunk of it!

Cheddar Chicken Spaghetti

2 cups cooked chicken, cubed
2 cups shredded cheddar cheese, divided
10-3/4 oz can cream of chicken soup
1 cup milk
1/4 t. salt
1/4 t pepper
Optional:  1 T diced pimentos
7 oz pkg. spaghetti, broken up and cooked

In large bowl, combine chicken, one cup cheese, soup, milk, salt, pepper and pimentos, if using; mix well.  Add cooked spaghetti to chicken mixture; toss to coat.  Transfer to a greased 13x9 baking pan; sprinkle with remaining cheese.

Bake, uncovered, at 350 degrees for 20-25 minutes, or until heated through.

Makes 4-6 servings


Pioneer Woman's Strawberry Oatmeal Bars

I have become such a Pioneer Woman fan.  She makes tons of wonderful food items.  I love her first recipe book.  I record all her shows and cannot wait til the new season of her show on Food Network.

I saw Ree make this recipe on one episode and had to try it.  Oh my, it was yummy goodness!  I added a little more preserves.  I took some to my mom's and she loved it, too.  It is one I will definitely make again and even try different flavors of preserves.
