My Girl Paula: Blackberry Muffins



This week's My Girl, Paula recipe was Blackberry Muffins. These are delicious! They would be great with any fruit. I had one still warm out of the oven....yummy!

Good choice!

Ingredients:
1/2 cup (1 stick) melted butter
1/2 cup milk
2 large eggs, at room temperature
2 c. all purpose flour
1 1/4 cups sugar
2 tsp baking powder
1/2 tsp salt
2 cups fresh blackberries, or frozen blackberries, thawed and drained
4 tsp sugar

Directions:

Preheat oven to 350 degrees. Grease eighteen 2 1/2 inch muffin tins, or line them with paper or foil liners.

In a bowl, stir together the butter, milk and eggs. In a mixing bowl, sift together the flour 1 1/4 cups sugar, baking powder and salt. Make a well in the center and pour in the milk mixture all at once; stir until blended. The batter will be lumpy; do not overmix. Fold in the berries.

Divide the batter among the prepared cups and sprinkle the remaining 4 teaspoons of sugar over the batter. Bake for about 25 mintues, or until golden.

Yield: 18

The muffins are inviting. Blackberries are good. I usually get blueberries so this was a treat to make.

Those muffins look yummy. My fav muffin is the blueberry muffin but I'm sure I'd like it with blackberries too.

I loved these too. I made them last week. I wasn't sure about the blackberries at first. But the next day, the muffins were even better.

I've never thought of putting blackberries in muffins, but yours look absolutely delicious. I might have to give them a try!
