Diet Coke Cake



I heard about this recipe in Weight Watchers about 2 years ago. I never tried it, though. I saw it on someone's blog (don't remember which one) and I remembered hearing about it. So, I thought I would try it.

I tried making it with Cherry Coke Zero, but couldn't taste the cherry flavor. This can also be made with other cakes and diet soda, like white cake mix and Diet Sprite or Orange.
1/12 of this recipe equals only 3 Weight Watchers points. I added 2 T of sugar free Cool Whip, which adds 0 points. It was so yummy and not a high calorie dessert.

Ingredients:

1 chocolate cake mix (I used Betty Croker chocolate fudge)
12 ounces Diet Coke

Directions:

Preheat oven to temperature on cake box.

Grease 13 x 9 pan

Combine cake mix and Diet Coke in mixing bowl. Mix according to box directions.

Pour into pan. Bake 5 minutes less than recommended amount on box (for example, if box says 23 minutes, bake for 18). Cake is done when a toothpick inserted in the middle of cake comes out clean.

Cool in pan on wire rack.

Top with Cool Whip.

Refrigerate leftovers.

I've made that cake too and I like it, plus it's so easy! It doesn't seem to matter if you use Diet Coke or Diet Cherry, since the flavor doesn't come through.

I've made this recipe dozens of times and it is so moist and amazing! I always make muffins and then spinkle them with a little powdered sugar. When the muffins are almost cool I put them in a ziploc bag and seal it and let it set a few hours. It makes them so moist and fudgy!
