Last night for dinner I made Cheddar Chicken Spaghetti. I had received this as a free recipe from Gooseberry Patch. It is from their
Sunday Dinner at Grandma's book. It was a great recipe to make after work. Not time consuming at all and very easy. We all liked it very much. I did add a little extra cheddar cheese. It makes a 13 x 9 pan; my son, his friend, and I ate a good chunk of it!
Cheddar Chicken Spaghetti
2 cups cooked chicken, cubed
2 cups shredded cheddar cheese, divided
10-3/4 oz can cream of chicken soup
1 cup milk
1/4 t. salt
1/4 t pepper
Optional: 1 T diced pimentos
7 oz pkg. spaghetti, broken up and cooked
In large bowl, combine chicken, one cup cheese, soup, milk, salt, pepper and pimentos, if using; mix well. Add cooked spaghetti to chicken mixture; toss to coat. Transfer to a greased 13x9 baking pan; sprinkle with remaining cheese.
Bake, uncovered, at 350 degrees for 20-25 minutes, or until heated through.
